From north to south, the sardine is the quintessential fish to kick off the summer season in Portugal.
This little fish is the symbol of Lisbon’s Saint Anthony’s Day celebrations on 13 June.
The sardine reigns supreme because it is at this time of year that it comes close to the coast to spawn. It needs all its energy, so it is plump and succulent, just right to fulfil its destiny.

June, with its ‘arraiais’ – squares or pavements where tables are set up to enjoy sardines and other dishes – is the perfect season.
The evenings are mild, summer is on the horizon and the atmosphere is electric.
The people of Lisbon make the most of the streets, concerts and dances.
How should sardines be eaten?
The June sardine, eaten during the festivities, is best served on a slice of rustic bread.
True Lisboners believe it must be eaten this way and no other. The juices from the freshly grilled sardine drip onto the bread, which serves as a plate.
But of course, you can use a plate. The sardine is then served with a pepper salad, bread and sometimes potatoes.
Huge barbecues take place in the streets. Some are reserved exclusively for sardines, whilst others are used to grill meat.
Sardines are accompanied by a glass of red wine or a beer.
In recent years, a plastic cup has been sold with the first order. It can be reused whenever you feel thirsty.
A good idea for reducing single-use plastic.
And if you come across a Portuguese person pinching their ear to indicate that the sardine is perfectly cooked, then don’t hesitate – treat yourself to this delicious dish. It’s becoming a rarity.

Every year, EGEAC, the cultural department of the capital’s city council, organises a design competition for the most beautiful sardine.
The format is set; the rest is up to the entrants.
Each year, 3,000 participants from 75 countries took part.
And five sardines were chosen. They evoke Lisbon, the festivities, traditions and also current concerns.
The winners of the competition receive a prize of €1,500.
